30. November 2013: CEMS-MIM Graduation Dinner
The “mushroom cream with a foie bonbon, pedro Jiménez Caramal” was served so that first the foie bonbon was just in the middle of the plate …
… and then the soup was put over the bonbon. Well, that you can do like it was served to me so it looks kind of not really appealing …
… or you can serve it a bit different, so it actually looks quite nice and appealing. The soup was fine but quite liquid and the taste of mushrooms was very, very decent. The foie bonbon was fine but somehow too creamy.
Frankly, the “sweet tender beef and celery purée, accompanied by artichokes, carrots and confit baby tomatoes” was actually really good. The beef was basically dissembling and incredibly tasty. The artichokes were a bit dry but the confit baby tomatoes and the celery purée was just breath-taking.
The “lemon sorbet with crunchy almonds and yuzu topping” was somehow not a perfect finish – the lemon sorbet was great but somehow the rest was not so persuading.
The setting of the table was very nice – a bit loaded but as eight people had to be seated at the table, it was a nice decoration.
The white wine “etcétera, 2012, D.O. Ruead” was not entirely to my taste but the red whine “Vina paceta Crianza, 2010, D.O. Rioja” was very much so. The service was funny – because we had a waiter and a waitress, Raquel. Now the waiter did not really know his job – but Raquel definitely did. Therefore, I am a bit biased when it comes to rating the service. In any case, it was a one-off event so it is not repeatable anyway but still, overall it was a nice experience.
