Quite a unique experience – the pop-up: Fabrik du Goût (10. June 2017)

The “Fabrik Du Goût” is a pop up event organized by the same guy who organizes “Secret Dinner” events. And the concept is well thought through – from entrance to the final round. It is quite simple – you book in advance and pay CHF 110.00 for the pre-determined menu (although you don’t know at the time of booking what you will actually get). However, the selection which was offered that day was quite lovely.

For starters they served “Goût de mer et de champagne (bacon, shrimp, cucumber, sour cream)” which was a good but nothing out of the ordinary. The “Cucumber Frog” (prosecco, basil, lemon juice, cucumber juice, gin, pickled cucumber)” which was part of the wine pairing was absolutely great.

 

What I liked way more was the second course – I mean, the “conserve de poisson (char, quinoa, cashew nut, mango)” didn’t look too interesting at first …

… but then you would get a can …

… which you could open …

… turn it upside down and kind of serve it on your plate by yourself. And it did not only look quite appealing – but the ceviche like prepared char was also rather delicious. Meanwhile, the “Entre-deux-Mers, AOC Entre-deux-Mers, Smith & Smith, Bordeaux, France” which was served with this plate did not persuade me.

 

The next course started a bit weird – with a “Japanese Zen garden” – so I was not entirely sure what to do with it so we started playing with the little fork and the sand.

Actually, the course started with “eggs”, respectively “onsen eggs” to be more precise …

… but first the dish was put on the table …

… and you had to open the egg yourself so would end up with the final dish – “Onsen Japonais (Onsen egg, Teriyaki, celery, Pak Choi)”. Mixing it up really did the trick and resulted in a good dish. Again, the wine, a “Blaufränkisch Kalk & Schiefer, Anita & Hans Nittnaus, Burgenland, Austria” was decent but for me it was lacking in oakiness and length.

Now, what was kind of my highlight that day was the “Un Peu de Muh (beef, potato, eggplant, shallots)” and the great thing was, they served à discretion. The meat was tender (flank steak) but on the hand it had a great consistency so you would actually have to use your teeth. The best thing though was the taste which was truly mouth-watering. And finally, the wine, a “Ventas las Vacas, Bodega Vizcarra, Ribera del Duero, Spain” was the wine which was also to my gusto. So, quite a perfect combination.

For dessert, they served “Riz au Lait (rice, cherry, vanilla, milk)”. Given I’m not a big fan of desserts anyway, I was obviously not very keen on the dessert but it was surprisingly fine for a dessert.

What I liked a lot was the bar where you would wait before you get to your table – not only in terms of decoration …

… but also in terms of drinks. I went for the “Johnny Bravo (Vodka, peach juice, water melon juice, Blue Curaçao, Cranberry ice)” (CHF 15.00). While the colour did look a bit surprising, the taste was great. I absolutely loved the drink!

When you arrived early, you would still be able to take a nice picture of the place – and it was spacious but it filled up really well and was quite crowded in the end.

The service – generally – did a good job. However, the woman sitting next to me wasn’t that lucky as the waitress spilled the first drink of the “wine pairing” (CHF 45.00) all over her dress and smashed the glass (by accident). However, in the end it was fine and we continued.

In terms of attentiveness you would have to kind of insist as for example I ordered water several times but it always took quite long until it finally arrived.

What I liked though was the way they had ‘served the menu’ – not only with regards to the food but with regards to the wine pairing where the ‘wine courses’ were printed onto a wine bottle – quite adequate I’d say.

In terms of other beverages but wine, the prices are absolutely decent for Zurich. A bottle of water accounts for CHF 8.00 while an “espresso” accounts for CHF 4.00. To sum it up, Christoph was able to pull off another good event – not the best I’ve attended so far but definitely worth visiting.
