Interesting concept to assemble your dinner with small plates: Restaurant Josef (11. August 2020)

The concept of the Restaurant Josef is in thus far interesting as you get to pick from a variety of relatively small dishes – and the idea is to take three to five which allows you to try quite a couple of different flavour combinations in the same seating. As a starter I went for “pickled beetroot with buffalo mozzarella, marinated potato salad, caramelized pumpkin and sunflower seeds” (CHF 14.50) which was a relatively simple dish but yet interesting in terms of flavour combination and a mixture of consistencies.

Te “ceviche from the Hotate scallop in a yuzu kombucha mixture with cucumbers and cherries” (CHF 19.00) was on the one hand more interesting as the combination of cherries with seafood really was exquisite. However, the actual scallop ceviche was somehow a bit disappointing as it was – at least in my opinion – sliced way too thickly for it to be enjoyable.

The “zander from the Lago Maggiore with candied fennel seeds, fennel cream and beurre blanc” (CHF 20.50) was generally quite delicious. However, the piece of fish, for it being a ‘main course’ (as far as you can say that for the specific setting of the restaurant), was rather small and, therefore, a bit of a disappointment.

The “carne cruda from the Fassona beef, served with grilled ceps, shaved Parmesan, French fries and smoked aioli” (CHF 19.50) was good and interesting – i.e., the flavour of the beef was smooth and not too intense, but in combination with the sprouts and the Parmesan it was actually great. The French fries were perfectly fried – crispy but not oily. And in combination with the aioli, it really made for a perfect dish.

The wine, a bottle of “Terra Tambujeiro” (CHF 77.00) and a bottle of “Hacienda Monasterio” (CHF 82.00) were a good pairing for the dinner. However, the “Terra Tambujeiro” wasn’t really that outstanding in terms of flavour and intensity. The quality of the service varied quite a bit, depending on the waiter – while one was relatively attentive and friendly, the other one didn’t seem to enjoy his job a lot. All in all, the Restaurant Josef is a nice restaurant with a lovely selection of small dishes in an okay atmosphere and with – depending on the individual – sometimes very good service.
