Exquisite and mouth-watering dishes in the Swiss mountains: Restaurant Epoca by Tristan Brandt @ Hotel Waldhaus Flims (26. February 2021)

The “Epoca by Tristan Brandt” is definitely a place which is recommendable but also plays with the name of Tristan Brandt (i.e., the reputation he has in Germany). The place is lovely in terms of interior design, the service is proficient in terms of attention and swiftness with a few flaws. But more about that later. The “4 course tasting menu” (CHF 175.00) with the “wine pairing” (CHF 85.00) was the idea of the evening and it started with “taco | corn | lime” which was surprisingly delicious. Not very Mexican, but definitely delicious.

The amuse bouche, “pork neck (eel, pea, melon, kafir)” was actually one of the highlights that evening. The combination of the bacon flavor of the pork, the saltiness of the eel, the acidity and citrus taste of kafir and the balancing sweetness of the melon just really made for a great combination in terms of texture and flavors.

The “Norway lobster (carrot, yuzu, sesame)” (usually CHF 56.00) was very interesting if you mix the ingredients on the plate. Especially, since the different consistencies made it a feast for the palate.

My second favorite dish was the “egg (nasturtiums, potato, mushrooms)” (usually CHF 34.00). It looked interesting in the way it was served but it became even more interesting when you mixed the different ingredients. The combination of the smoothness of the egg yolk, the forest flavors of the mushrooms, the crunchiness of the crumbles and the intensity of the black lines was just exquisite and absolutely mouth-watering.

The “mango lassi with coriander oil” was a little break in between and was interesting but compared to the rest of the dishes relatively boring – especially since ‘with coriander oil’ sounded interesting but was barely there in terms of taste.

The “beef (eggplant, miso, radish)” (usually CHF 76.00) was, again, great. Not as mind blowing as the previous dishes but the quality and the way it was prepared was outstanding. The meat was of a great intensity in terms of flavor and, therefore, incredibly enjoyable. And not only the beef was good but also the eggplant in combination with miso was quite exquisite.

As a pre-dessert, a “wheatgrass ice cream” was served which was definitely interesting and refreshing but not sure it will become my favorite ice cream ever.

The “milk punch” was somewhat interesting but relatively ’empty’ in terms of flavor.

Instead of the regular dessert, I went for the “cheese assortment (Affineur Jumi from Boll)” (usually CHF 28.00) and I must say, that really disappointed me. Not that the cheeses weren’t enjoyable or anything but there wasn’t much explanation about the cheese and …

… the selection was rather limited (not to say poor). So, in a restaurant like this, I would have expected a larger and more refined cheese assortment.

However, when it came to the “petits fours”, there were enough options and you could select quite a few – and they were good! So, while the cheese (which isn’t part of the original menu) was not that overwhelming, they outdid themselves in terms of petits fours.

As mentioned, the interior design of the restaurant is really lovely and appealing …

… with interesting local art and decoration …

… and the service is absolutely great – with the one exception that the dish was served before the wine pairing and one had to wait for the wine to arrive to enjoy with the respective course. If it wasn’t for that, I’d say close to perfect service. All in all, the Epoca by Tristan Brandt is a place I would definitely visit again when in its vicinity – booking in advance is highly recommended!
