A mouth-watering Peruvian fusion kitchen experience: Restaurant Sumaq (10. April 2021)
Due to the fact that it was raining rather heavily that day, the original reservation was cancelled by the restaurant so we had to look for a short-term alternative. And, in all fairness, we were lucky. The Sumaq is listed in the Guide Michelin and, luckily, still had availabilities for lunch. Even better was the fact that they offer a “tasting menu” (EUR 60.00) which starts with a “shot of pisco sour” which was really well-made and tasty.
The “majestuosa sopa de chuño negro (patata deshidratada en invierno, de las alturas del Cusco. Servido con queso andino y secreto ibérico)” which was served as a first course was giving you that feeling of Latin American cuisine. Not really sure how this thing is usually supposed to taste but I can tell you it’s definitely something you would want to try. It’s somehow simple yet refined, smooth, yet intense, watery, yet full of flavor. Definitely something new and definitely something to enjoy.
The “secuencia de ceviches (ceviche Nikkei, ceviche exótico y ceviche clásico)” was an assortment of different ceviches and, personally, it started with the best one (on the left) and finally went to the less enjoyable ones (which were still good).
The “taquito mixto de pescado (atún rojo y salmón flambeado en salsa de anticucho, aguacate, boniato crujiente. Finalizamos con una criollita cítrica y picante)” looked like a big-ass taco. And it was exactly that. What I loved was the fact that it was really like a Mexican taco and not one of these TexMex hardshell tacos. The only thing which bothered me a bit was the avocado cuts as they were too big and somehow killed a bit of the whole taco experience but it was definitely something very enjoyable.
The “causitas a lo pobre (con solomillo de ternera flambeado, huevos de codorniz, crema de trufa blanca y chips de patata)” was the main course and it was basically the “thing of the poor” (at least that was the name). And I must say it was enjoyable. The beef was smooth and not overcooked, the potato mash with white truffle (of which you didn’t taste much) was a good base for the dish. The quail egg on the other hand didn’t really add anything to the dish and was – in my perspective – unnecessary.
Last but not least, the dessert was a “maracuia tarte with cactus flower sorbet”. One can definitely argue about a lot of things but the color and the intensity of the color of the sorbet is just outstanding. And not only the intensity and the color itself but also the actual flavor of the sorbet. Definitely something I haven’t tried yet and definitely something you should try if you get the chance to!
All in all, I loved the lunch at the Sumaq as the food is absolutely delicious, the two waiters do a marvelous job, and despite the fact that you’re seated outside near to a busy street, the atmosphere is fine. So, all in all, and imaging being able to sit inside and enjoy a proper atmosphere, I can recommend Sumaq and recommend you to book way in advance since a good dozen people walked by and tried to get a table which was literally impossible without a pre-booking (there was maybe a total of 6-7 tables available).
