Good Swiss dishes in a restaurant in Bitsch: Restaurant z’Matt (17. July 2021)
The funniest thing about this place is where it is located. The little town is called “Bitsch”. Yeah, literally. And no, no typos here. In any case, the z’Matt is a nice local restaurant which serves simple but good local dishes. I went for the “carpaccio of jerky with Valaisan cream cheese with rosemary oil and green salad” (CHF 15.50) which sounded interesting and I was intrigued by it. And while it was definitely good, it was a bit disappointing in the sense that it was actually not all that interesting in terms of flavor combination.
The “Valaisan Cordon Bleu stuffed with raclette cheese” (CHF 38.00) was fine but really just relatively standard. I mean, I have definitely had better cordon bleus in the past and it was somewhat thick which did not really add to the greatness in terms of flavor and taste experience.
However, the little garden you get to sit outside in is quite okay and the waitress actually did a great job. She was pretty much alone out there and there were about 12 tables occupied with people still ordering stuff but she managed to act calmly and serve everyone without anyone getting visibly upset (since they were ultimately no long waiting times, or at least deriving from my personal experience, it didn’t seem like). If you’re in Bitsch, I can recommend you to pay the z’Matt a visit.
