Not sure it’s a full Michelin star but great female sommelier: Restaurant Es Fum @ The St. Regis Mardavall Mallorca Resort (20. August 2021)
Somehow, the Es Fum has been on my to do list for quite a while since it had been recommended to me by one of my best friends. So, I was relatively stocked to finally be able to try it. The “small tasting menu” (EUR 135.00) with a “wine pairing” (EUR 75.00) starts with two small “amuse bouches” which are definitely perfect to get your palate started.
The idea that you get five different butters in different colors with your bread is just so very lovely and appealing making you want to try the bread just because you really want to try the butter. And it was good.
Then, there was time yet for another “amuse bouche” by the chef which really got you prepared and ultimately started with the real menu.
The first course was “serviola con aguacate y queso maxorata” which was good and made you want to try more dishes.
The “paté en crôute de porcella mallorquina” was something enjoyable but somewhat also rather regular which is not really something I would have expected in a 1 Michelin star restaurant.
The “arroz cremoso de erizo con gamba roja y pomelo rosado” was actually amazing. The creaminess of the rice in combination with the richness of its flavor was just absolutely perfect.
The “lomo de lubina com mantequilla tostada y ajo negro” was somewhat surprising as that the fish itself wouldn’t taste like too much but it worked very well with the black garlic and the butter.
The “centro de solomillo con pure cremoso de patata y salsa perigueaux” was delicious! I love it when they make the meat in a way so it’s still raw inside but carries the grill flavors, reinforced by sea salt. It was truly an outstanding main course.
The “babá de dátil, pistacho” which was the dessert was fine too. Not really anything which was tickling my taste buds but new and generally good.
Finished with some earl grey, it didn’t really do much / get much better in my personal opinion since it made the dish ‘watery’ which I was not really a fan of.
The selection of “petit fours” was generally nice to finish the dinner in combination with a “Nonnino Reserva” (EUR 18.00).
While the place is nice in terms of atmosphere, it could be even better if the view was located towards the sea and not towards the tennis courts. Secondly, the service quality and enthusiasm varies massively between waitresses. While the actual waitress managed to fake smile and laugh during the whole dinner but in a way it was almost not noticeable (but it was so it made it very annoying), the somelieuse did an outstanding job in explaining the wines, being authentic and jovial and making it a pleasant evening. So, to sum it up, if you want to go, you have to book in advance. And it’s something which I think one can definitely try but it’s also something which did not completely blow my mind.
