A delicious 1 Michelin star experience with a view into the kitchen: Restaurant 1741 (22. October 2021)

The “nine course surprise tasting menu” (EUR 155.00) with the “wine pairing” (EUR 95.00) is definitely something, I can recommend. The first two amuse bouches were “cod fish with dill oil” which was absolutely mouth-watering and “beetroot with fish eggs” which was okay too but not as good as the cod.

The “Parmesan sticks” were fine too and overall enjoyable.

Next in line were “lentils with foam of water tomatoes” which was an interesting combination since the lentils provided that element of crunchiness while the foam of the water tomatoes was incredibly smooth abut still rich in flavor.

What I liked especially that evening was the “foie gras on a coconut jelly and pear reduction”. The foie gras had a nice taste and the sweetness of the coconut jelly on which the foie gras was placed really added to the dish. In combination with the even sweeter pear reduction, it turned out to be a super luscious dish.

If you ate it with the “brioche” it was even better since the brioche was incredibly buttery and a good balance to the foie.

Sometimes, the simplest dishes are the best – the “pommes de terre with Münster cheese” was basically potato mash with a strong typical French cheese called Münster. And it was absolutely amazing – the vegetables on top provided the dish with the necessary texture so it wouldn’t be only a potato mash.

The bread and butter was nice since it was served with “beurre semi-salé” and “puff pastry and celery butter” which really made for a great flavor combination.

The “pied de monton consomé with mushrooms” was a nice reduction but could have been more intense in terms of flavor.

Finally, it was time to move towards main courses, and the first one was the “red mullet, red mullet sauce, fennel and ginger ravioli” which was a great combination of the intensity of the fish sauce with the fish (which wasn’t very intense by itself) and the interesting flavors of the fennel and ginger ravioli. I actually liked it quite a lot.

Next in line was another fish dish, the “monk fish with cauliflower mash, spinach and curry madras” was in thus far interesting as the monk fish was nice and since it was also seasoned slightly spicy it actually made for a good dish. The curry madras base was intense but not overwhelming yet. Only the spinach was relatively plain compared to the other elements of the dish.

The actual main was the “pigeon with pigeon sauce and mushrooms” which was okay but I must admit that pigeon isn’t my favorite meat ever. It was okay, no question, but probably not my chosen main meat.

Luckily, they also offered a selection of different cheeses and I decided to try all of them – which they allowed – and I must say that the selection is nice. It isn’t a large one but the quality is overall good so you would enjoy the cheeses. I was a bit surprised though that they were not served with any bread, butter, or chutneys.

The first dessert was “black current jam and coffee ice cream” which was not really to my liking since the coffee ice cream was too overwhelming.

However, the next one, called “sweetness and freshness of milk and honey” was something I could relate to. It was sticky, sweet but since milk and honey are actually two great flavors, also in combination, it was overall very lovely to eat …

… and went perfectly well with the ice cream which came with it.

Last but not least, there was a selection of friandises which were a nice ending to the evening.

What is actually great, if you manage to get a space, is to dine on the 2nd floor where the kitchen is located and you have the possibility to watch the kitchen do their thing and prepare your dishes throughout the whole evening. So, when you book the 1741, make sure to mention that you would like to watch the kitchen – it’s fun to watch.

The service is also rather exquisite in terms of attention, speed, and friendliness – just how service really should be. So, all in all, make sure to book your table early enough to make sure to score a table when if you intend to go there.
