Having the chance to visit Franz Wiget before he closes in June 2022: Restaurant Adelboden (28. January 2022)

Since the Restaurant Adelboden will close by end of June 2022, I decided to give it a try before it wasn’t possible anymore. And somehow I got super lucky since I had randomly sent an email about one week back and somehow scored a table. We went for the “six course menu” (CHF 235.00) which started with small bites which were all great to get your palate started.

First in line was a “mise en bouche (pastry with blood sausage)” which was good as well.

I liked that they bring you bread to your table but was somehow hoping for a bit of a bigger selection when it comes to the type of breads.

The “goose liver with port jelly, shallot confit, and home-made brioche” did not only look amazing – it also tasted amazing. The little ball was a little ball of flavor. The intensity of the goose liver was amazing – a delicious combination of the sweetness of the jelly and the earthy flavors of the goose liver.

What gave me a flashback to the time where I had been eating at another 2 Michelin Star restaurant was the “goose liver broth” since it reminded me of the “goose liver sauce balls” I had in the Mraz & Sohn in Vienna years ago.

The first official course was “Norwegian cod with salsify, Vongole Veraci and Sauce Château-Chalon” which was simple in terms of complexity of flavors but great at the same time. The cod wasn’t chewy at all (which it all too often is) but was actually smooth and went great with the Château-Chalon sauce.

The “taglierini with a poached egg ‘à la Carbonara’ with farmer’s bacon and aged Alpsbrinz (Alp Chiemeren 2016)” was a truly lovely dish. The egg was cooked perfectly so when you’d open it, the egg yolk would distribute evenly over the pasta on which it was laying. The fact that bacon makes everything better was proven once more. Not that tis would not have been possible otherwise, but the bacon combination really added something to the dish.

As a main course, they served “free roaming chicken from the Alpstein (a mountain in Appenzell) served in Périgord truffle jus” and while I think chicken as a main is a bit boring, it actually turned out to be absolutely enjoyable.

And the fact that they serve the so called “Gummelistunggis” (which is basically mashed potaotes) in a 2 Star restaurant is somewhat amazing. I mean, the mashed potatoes are incredibly good – so smooth, so rich, so full of butter. Truly something you want to eat much more of, but also surprising that you get that in a restaurant such as this.

Before we got dessert, you had the chance to get some cheese from their “cheese waggon” and very untypically, they said that you can get as many as you wanted. Well, of course a part of me wanted to try every single cheese which was on that waggon but rationally that wouldn’t make sense so I had to limit myself – to nine different ones.

And I must say that they have really tasty cheeses – which was just absolutely great.

The fact that it’s served with a few adds is nice too …

… but it only truly blew my mind when I saw the whole thing which included some sausage and cold cuts which is quite unusual to be served with cheese.

Then it was about sweets – the pre-dessert was a “vanilla and caramel cup” which was generally quite lovely since it is really what I personally like in terms of flavor combination when it comes to sweets.

The official dessert was a “pineapple millefeuille with passion fruit sorbet” which was lovely in terms of design – and good as a dish too although the psasion fruit sorbet was too sour for my personal gusto.

Last but not least, the selection of “petit fours” in the end was quite amazing. You really get a bit of everything ranging from caramel to chocolates to just tasty bites.

What I like about the place is the unpretentiousness – I wasn’t even aware that the place had 2 Michelin stars until I ended up at the entrance being quite surprised. Frankly, it’s a great place – and a pity it closes down but if you manage to get a table until end of June, lucky you, you should definitely try it!

All in all, the Restaurant Adelboden (careful, that’s the name of the restaurant, not the location) is an amazing place which offers delicious dishes in a great atmosphere, with exquisite service, and a fair price. Booking in advance is an absolute must though!
