A bit disappointed compared to my 2018 visit: Restaurant Schlüssel (5. February 2022)

It’s a bit more than three years ago since I’ve last been to the Restaurant Schlüssel in 2018 and I was very much looking forward to experiencing it again. The “three course menu” (CHF 86.00) started with a “selection of cold cuts, Sbrinz and a beet root soup with horseradish stripes” in it. The Sbrinz was aromatic and so was the beetroot soup – a good start.

The “salmoun trout with vegetables à la julienne” was a good combination of textures and flavors. I liked the fact that the vegetables had a hint of sourness which would balance off the sauce and make it a pleasant dish overall.

Next in line were “ravioli with tomato sauce” – and while the dish per se was simple, the tomato sauce was really aromatic and started tingling your taste buds – lovely to continue the dinner.

The main course was heavy on the meat side with “beef filet, veal filet, veal ribs, brokkoli and a potato”. The quality meat and the way it was prepared was good. The ribs could have been cooked a bit more so that the meat would easily strip off the bones (which it didn’t) but it was overall tasty. Personally, they could have been paying a bit more attention to the side dish or the garnish, respectively. For 13 Gault Millau points I would have expected a bit more.

The “cheese wagon” remains a highlight of the restaurant …

… and when you select your cheeses, you get a good combination of different flavors and intensities. Personally, in terms of presentation, one could have chosen a different plate or a larger one as like this they started kind of ‘flowing together’ which wasn’t entirely lovely.

The place itself is nice since it’s rather traditional and the service is friendly and attentive. The chef himself pays you a visit at the table which is nice and quite appealing.

All in all, the Restaurant Schlüssel is definitely a place which I like in terms of atmosphere, service and also food. Although, personally, it seems to me like the dishes used to be more refined. If you want to go, you need to book well in advance as they are usually quite packed.
