A great last evening in Thailand before taking off back to Europe: Restaurant Resonance (3. December 2024)
Given I’ve only had a few hours in Bangkok, I wanted to find a nice place for dinner before take off back to Europe, and given all the places I wanted to dine at in the first place (to complete a few more on “The World’s 50 Best”) were not open that day, I kept searching, and eventually stumbled upon the Resonance, which has 1 Michelin Star.
The whole booking process is a bit tricky. You need to do a down payment of 2’000 THB (plus 100 THB transaction fee) when you book, and then you need to provide a ton of information to the restaurant, which felt a bit over the top. In any case, once you’re there, you get the “Resonance Tasting Menu” (4’500 THB) (as there isn’t any other option), which starts with a “mushroom soup”, which was not only tasty, but also great in terms of flavour profile.
Next in line was a sashimi on a blueberry sauce with seaweed, the “Shima Aji, Blueberry”, and while I found the bite almost a bit too small, it was actually quite tasty.
Next in line was the “Sand Whiting Fish”, which was basically the carcass of a shrimp filled with the sand whiting fish, which turned out to be quite tasty, but a bit on the “hot” side of things in terms of temperature.
Before the next course was served, they showed you the ingredients they used for the broth, which were part of that course, which is something I quite appreciate.
The “Asparagus, Hokkigai” was something one needs to get used to. The broth was lovely, the asparagus spaghetti as well, although they stuck together quite a lot, so it wasn’t easy to eat them. The Hokkigai mussle on the other hand was really not to my liking as it was way too chewy and had a superbly weird taste.
Next in line was the “Rock Cod” and I was a it skeptical at first because I thought that cod is rather boring, but it actually turned out to be quite nice – especially in combination with the sauce elements served.
When I read that the next course was “Grilled Vegetables”, I was definitely not too happy about that, but it turned out that it was actually delicious. Not quite sure why, but they really managed to serve the vegetables with a sauce, which made them outstanding.
Then it was time for the “Tokyo X”, which was a piece of meat with some sauce, and I must say, it was nice. The quality of the meat was good and so was the sauce.
I loved when they showed me the “Ka Pao” in all its glory – unfortunately, though, they only used the big bowl for show and you would get your actual dish in a smaller version.
Although, the small “Ka Pao” didn’t look as great, it turned out to be truly delicious – since they had de-boned the chicken before, it was easy to enjoy and nibble every little bit off the bone.
The approach was a similar one with the “Beef Curry” as they showed you all the different elements including the huge pot of rice (and I was already wondering how one person was supposed to eat that) until they …
… prepare a smaller version for you to enjoy. The “Beef Curry” was truly delicious as the curry was perfectly balanced off by the rice, so you would have a rich and tasty dish overall.
The first dessert was definitely something I haven’t tried before – the “Époisse Ice Cream” was not your every day ice cream. I mean, who has cheese as an ice cream usually – exactly, noone! That being said, the flavour profile was actually quite lovely as the crunch on which the époisse ice cream was served gave it a bit of a balance, and made it surprisingly tasty.
The “Mikan, Kinome”, which was the second dessert of the day, was refreshing and a good combination of different textures and flavours. So, despite the fact that I’m not such a big fan of sweets, I absolutely enjoyed it.
Last but not least, they made a super light “Pear” dessert, which was a little cake, which was filled with pieces of pear and topped with a very light pear foam, which was absolutely lovely.
The staff is superbly friendly and attentive, and makes sure you have everything you want and need at all times – and they were accommodating my request to be a bit quicker than usually, since I had to catch the flight back to Europe, absolutely flawlessyl.
The only thing I didn’t find too appealing was the interior – the place is relatively ‘clean’ and ‘dry’, and with the AC put at (what I felt like was) 20 degrees Celsius, it feels a bit cold.
All in all, if you’re less in a rush, I can definitely recommend you the Resonance as a good place to get tasty dishes for a fair price and very competent staff.
