A star well-deserved with a sommelier who really makes you excited about the wines to taste: Restaurant Rosami at the Villa (11. September 2024)

The Rosami at the Villa is a great choice for tasty dishes. Once you’re seated you are offered an aperitif and I decided to go for the …

… “Smokey Negroni”, which is definitely something different. It’s a Negroni, but truly smokey, as they put the negroni in the bottle and fill it up with smoke, and then they shake it roughly, so the smoke really goes into the negroni. So, if you’re not into smokey stuff, then this isn’t for you (and it was definitely enough for me after one).

Then it was time for the “tasting menu” (EUR 105.00) and it started with a few amuse bouches like the “beet root dumpling, a “clam ball” and a “brioche with beef tartare and Comte cheese” and, since I started left, where I was supposed to start, I was lucky to experience an increase in taste and flavour intensity from the left to the right.

Then it was time for “bread with French butter with Merlot vinegar and Merlot salt” and I was not too excited to try the butter, but was perfectly positively surprised with the smoothness and interesting flavour of the butter (combined with great bread).

Then it was time for an egg … or the like, which was in fact …

… “date purée with buckwheat foam and buckwheat crumbles”, which was in fact not only interesting in terms of texture, but also in terms of flavour.

Then it was time for the “Japanese custard with hazelnut and hazelnut oil, French beans, and peas” and I must say, this was mouthwatering delicious. Especially the slight hint of hazelnut across the board was superbly nice.

Then it was time for the “octopus”, which looked a bit funny since you had that ‘octopus cracker’ on top of the dish, which I liked as a decoration. But, even better, the dish itself was delicious too. A great combination of flavours and textures.

Then it was time for the “lobster roll with summer melon and sauce with curry, coconut and lobster oil”, which sounded absolutely great, however, it was rather okay than great. Somehow, I lacked the taste of lobster in the dish as it was overpowered by the rest.

The next one was interesting. It is basically a bluefin tuna wrapped in cumbu seaweed. Never heard of that? Yeah, me neither until then. But the good thing of the cumbu seaweed is that it emits flavour without being overpowering or the like, but it’s rather subtle.

So, you finally get the “bluefin tuna loin with cumbu seaweed and braise endive stuffed with green pepper, pepper and corrosive potato mayo and garlic flakes with a pinch of salt and a pepper sauce made of 7 different peppers”, some “bread with garlic to (explicitly!) sauce the plate” and a “refreshing salad of green apple cucumber grape and smoked eel with a grating of tuna belly matured for 120 days”. And frankly, it was absolutely flavourful – loved it.

Then it was time for a “local cheese coated with white chocolate”, which I obviously loved because cheese and white chocolate – actually very much ‘why not!’.

The next dessert was then finished at the table with a “shaved ice machine” from Japan …

… and looked delicious, and it absolutely was.

The final official course was a “tartine des tomates” and while I was a bit surprised that they put tomato as a final fruit into the dessert, I must admit, it turned out absolutely perfect. Was a great, and incredibly interesting, bite.

Finally, it was time for the friandises which were good. What I loved a lot was the “oinky (white chocolate with bacon)”. Sure, one can be sceptical if this works, but I dare say, it absolutely works a charm! A truly perfect ending to a great dinner.

The place is lovely as there is a good space between the tables and the atmosphere is all artsy, which is lovely.

On top of that, the staff is absolutely professional and superbly friendly. I would like to highlight the sommelier, who did an amazing job at introducing the wines. There was that much passion in his explanations that you would just want to urgently try the wine – the guy was truly amazing in his job.

And last, but not least, the menu is also relatively cheap, and the staff does a great job. So, frankly, it’s a rather great place to have a tasty enjoyable dinner.
