A summer replacement for a Michelin-starred restaurant: Pop-up Nori Handroll Bar @ The Counter (14. July 2025)

Given the 1-Michelin-Star restaurant ‘The Counter’ is currently on its summer break, they decided to do a summer pop-up in the same location, which is partnering with the Brasserie Süd, and they offer quite lovely dishes here. The concept is basically all kinds of rolls, so, I decided to go for the “beef tartar roll (chimi churri, crispy onions, miso mayo)” (CHF 15.00 per roll), which is stuffed very generously, and superbly lovely once you have a bite.

To balance things a bit and to feel a bit better about what I eat, I decided to go for the “cucumber salad” (CHF 7.00), which was quite nice and refreshing.

The sauces, with which were served, were really nice. Especially the slighly orange sauce on the rigth – the perfect level of spiciness.

Given this place is all about roles, I figured that I should order one of this ‘self-roll sets’, and went for the “Al Pastor Set Self Roll (pork belly, rice, pineapple herb salad, lime)” (CHF 28.00). The cool thing is that you get about 5-6 rolls like that, and you’re free to compose your rolls the way you want. If you mix everything you get a very delicious bite – so, personally, I can highly recommmend the self-roll sets. They are fun, and the food is great.

The nice things is that you get to sit at the counter and watch the guys prepare your rolls (if they are not already pre-prepared) …

… and despite the setup, it’s relatively spacious and enjoyable.

So, while this place hasn’t fully picked up yet in terms of number of customers walking in, I assume this will happen soon as the colder season settles in. That being said, I would highly recommend you to book well in advance to secure your spot.
