An outstanding dining experience accompanied by flawless service: Restaurant Sushi Omakase by Walt (30. August 2025)
The “Omakase Menu” (EUR 195.00) is the only thing they serve at Sushi Omakase by Walt, and the only thing you can let them know is if you have any allergies. That being said, once you’ve arrived on time (since there is only space for 10 diners and you all eat in sync) you’re brought to the area where the dinner takes place and it starts with “barnacles”, which are a good way to get started.

The next course is “hamachi with seaweed, sake, and rhubarb” and I must say I absolutely enjoyed the hamachi since it had a nice intensity and was overall lovely.

Then, it’s time for you to be shown the selection of fish you will enjoy during this dinner, ranging from a variety of different tuna qualities to fish roe, caviar, prawns, and oysters.

The next course is the “egg custard with king crab and fish roe” and while I’m not necessarily the biggest fan of egg custard, I must admit that it was quite delicious due to the king crab being built in as the bottom layer of the dish.

Something I had definitely never tired before was the “sea anemone with sea weed, alga nori, and a sancho pepper leaf”, which was interesting in the sense that it was definitely something I had never tried before. And it was actually quite enjoyable.

Next in line was the “grilled big eyes red snapper with ginger & soy sauce, green beans, and kumquat”, which was not necessarily my favorite since the texture was a bit particular.

What is great is if you get a space right where the sushi master is working …

… since you can watch him prepare everything right in front of your eyes.

The way how he is cutting the different fishes into sashimi slices …

… one after the other …

… in steady cuts and same size pieces …

… as well as when he grates the fresh wasabi (which tastes so different from the ‘regular wasabi’ we all know).

Then he prepares the sushi bit by bit – by forming a little ball of rice, shaping it into sushi form, placing a little dot of wasabi on top of the rice, placing the fish on top of it, and finally applying a little bit of soy sauce with a brush on top of it. The sushi is definitely among the very best I’ve ever tried. It was fresh and had a lightness and intensity at the same time, which was just great.

And that continued with each bite, with each higher degree tuna belly slice … just pure delight in your mouth.


Then it was time for a little break with the “tomato dashi broth, alga bonito, clams”, which turned out to be a welcome change to the fish courses. And it was nice and warm, but I must admit that the sushi was just what you really come here for. Sure, the dashi was great, no question, but it just felt a little like a step backwards compared to the amazingly nice fish.

And of course, this culminated in the fattiest of the tuna bellies there is! Absolutely delicious!

Then it went over to “oyster sushi”, which is something I had not expected to like, but I must admit that this bite was actually – surprisingly to myself (!) – great!

Then it was time for yet something else in the form of “langoustinee with head and crispy legs served with black and white mushroom”. I loved the langoustine sushi as it was fresh and, hence, great. Additionally, the crispy head was so full of flavor that you would just like to enjoy more and more of that.



Then the sushi was done – and we got a “tuna with white soy sauce, caviar, flor de shiso”, which had to be mixed together and turned out to be absolutely delicious. Especially in combination with these cubes of fruit and the caviar, you get a little bit of everything in terms of flavors but also in terms of textures.

Then it was time for a dried fish …

… which was wrapped in a nori leaf and some soy sauce put on it …

… finished up with some seasoning …

… and then put directly in your hand to eat. And I must admit, that was a delicious bite! Loved it!

Then it was time for some actual “fluffy sweet bread”, which seemed to be some kind of a predessert, and was rather enjoyable.

What I truly liked, though, was the “white miso and sweet corn ice cream with sesame seed crumbles”. The ice cream is not necessarily your everyday thing, but it was absolutely delicious and definitely a unique flavor.

The place is puristic and simplistic, but still very appealing (the picture below depicts a separate room from the main dining room, but the main dining room has the same calmness and elegance to it. On top of the good quality of the food, I must highlight the quality of the service. The staff does a flawless job – they are superbly attentive, outstandingly friendly and polite, and almost invisible while makign sure you have everything you need at all times.

So, while the Sushi Omakase by Walt isn’t necessarily a cheap experience, it’s definitely one worth doing when you’re in Eivissa and book early enough. Frankly, I’d definitely go back here if I’m back on Ibiza again.
