Definitely an interesting experience where you wouldn’t expect it: Restaurant Taverne zum Schäfli (12. June 2021)

The Taverne zum Schäfli has been on my to do list for quite some time but since it’s quite a bit outside of Zurich, I have never had the chance so far. What is definitely of importance is the fact that you have to book your table in advance. Outside, there are not too many tables which can be occupied so it definitely makes sense to be on the safe side.

Once seated and once you’ve ordered your menu, you’re at first served a trio of amuse bouches.

The second amuse bouche was a “reinterpreted vitello tonato” which was interesting in terms of flavor and texture since there was a certain crunchiness added to the dish which was quite unique.

But the other elements which came with it were as delicious!

Even the broth was absolutely amazing and just created happiness moments in ones palate.

I also enjoyed the “bread and butter” quite a lot since the bread was fresh and fine and the butters were actually absolutely enjoyable.

Ultimately, it was time for the “5 Course Tasting Menu” (CHF 199.00) which started with “Belon oyster, champagne” which was good. I will probably never really find access to oysters but it was definitely good and overall enjoyable.

The “lobster from the Bretagne served duck liver and green apple” was definitely something I had enjoyed. The grated duck liver was definitely interesting / special but overall enjoyable.

The second course of this course was the piece I enjoyed even more since you would actually get a proper piece of lobster with duck liver – in a lovely delicious sauce.

The “oxtail ravioli served with Canadian Périgord truffle and duck liver” was definitely good. I liked the ravioli a lot – however, the Pérdigord truffle didn’t add that much to the dish in my personal opinion.

There was a “sorbet” in between to provide your palate with a little break – and that was quite delicious but also quite a portion.

The “maibock from Austria, white asparagus, chanterelles” was definitely more than a good dish. The meat was good, aromatic and intense. The little pie with the green asparagus on the other hand – that was damn breath-taking. Incredibly intense in flavor – for some at the table definitely too intense – but I loved it. So much flavor, such a high intensity – outstanding!

The “white asparagus” which was served with that was also tasty but did not get up to the level of the rest of the dish.

For dessert, I went for the cheese course and I must say that was definitely a stretch. Now, I do love intense and strong flavors but this one was definitely over the top! The “Stanser Fladä with roasted onions” was just so intense – and not in a pleasant way like the green asparagus pie. Now, personally, still edible but definitely way too intense.

The bread which was served with the cheese course was definitely necessary though to provide the whole dish with some balance.

Last but not least, the ‘friandises’ which were served after the menu, were great!

The “wine pairing” (CHF 99.00) did the trick. It paired well with the dishes but for my gusto, it did not contain any kind of surprise wine in the whole serving.

What is truly nice though is the outside where you’re seated if you’re lucky and have enough space as well as the inside …

… so, to sum my experience in the Taverne zum Schäfli – it was good and I’m happy that I’ve been here. Personally, it was a bit too close to the traditional French cuisine with lobster, truffles, and liver. Definitely not bad, but I was somehow hoping for a bit a more playful menu.
