Such a delicious food experience like I haven’t had it in a long while – and a vegetarian one: Restaurant KLE (26. August 2022)
It is quite a challenge to get a booking at the Restaurant Kle – you have to book weeks in advance, and even then it is absolutely not sure that you’ll actually get a booking. I booked about three weeks in advance, and was still ending up on the waiting list. On top of that, the booking was only confirmed about two days before. In any case, finally, I was able to try the purely vegetarian place with 15 Gault Millau points, and I was very curious. I liked quite a lot that they only have one surprise tasting menu, and you can only pick between a 3-, 4-, or 5-course menu. Obviously, I wanted to go for the “5-course menu” (CHF 104.00) and went for the “wine pairing” (CHF 75.00).
As a starter, you’re served “soft pillow bread with a selection of pickled vegetables, tomato spread, hummus, and some kind of spicy sauce”. And while the ‘soft pillow bread’ was a bit greasy, it was also delicious. And the combination, with the chili-based sauce, was just absolutely exquisite!
The first course of the evening was the “tostada, hazelnut, beet” which was quite rich. The dish was relatively simple, but it was also interesting in terms of flavour and texture combination.
Next in line was the “tomato, aioli, saffron” – which looked rather boring. But actually turned out to be quite exciting. The saffron based sauce/soup was tremendously rich, and the different types of tomatoes were quite mouthwatering.
Next in line was one of my favourite dishes – “aubergine, beurre blanc, horseradish” which was a great combination since the aubergine was prepared in a crispy way, and the beurre blanc (which was not an actual beurre blanc, but a made-up version) was rich and full of flavour. Definitely an outstanding and fascinating dish.
Next in line was the “oyster mushroom, BBQ, sea buckthorn” which was much better than I had expected since I’m usually not too big of a mushroom fan. But this one was exquisite! The mushroom was rich in flavour and had an interesting texture. The combination with the freshness of ‘sea buckthorn’ was quite nice, and gave it a bit of a surprising element.
The “rice with mushroom powder” which was served on the side was helping you to fill your stomach, which was nice. On top of that, I liked the combination with the mushroom powder, which was quite unique (and not something I think I had tried previously).
The last dish of the evening was “verbena, blueberry, meringue” and it was a nice, smooth, intense ending to a lovely vegetarian dining experience. I do understand why the place is booked so well in advance, and why the place has 15 Gault Millau points. The food is definitely quite amazing, especially, since everything is purely vegetarian.
The “Moroccan Mojito” (CHF 15.00) which I had to start the dinner, was quite nice as well. Definitely not as good as the dishes, but good to get started.
On top of that, the place is lovely in terms of interior design, but it’s rather small, i.e., there are not too many tables available. Which, obviously, explains why there are not that many reservations available, and you have to be lucky to score a table on a Friday evening. What can be said though is that the service is exquisitely friendly, and makes sure that you have a marvellous experience.
