An interesting dining experience, since they serve game you usually don’t get, like marmot: Restaurant Adler Ried (1. November 2023)

It is about three years ago since I’ve last been to the Adler in Ried – and they are famous for their game selection. I started with a “champagne drink” to get the palate going, and it was surprisingly delicious in terms of lightness and flavour.

As a starter on the house, we got served a “deer sausage”, which was quite intense in terms of flavour, but also rather lovely at the same time. The bread was fresh, and you would get a little butter to keep enjoying it together with the sausage, respectively the crackers.

The first starter, we decided to have, was the “game terrine accompanied by an Autumn salad garden” (CHF 21.50). The terrine was enjoyable, but didn’t really blow my mind in terms of flavour profile. The texture was smooth and went well with a piece of bread. I liked the rather traditional salad on the side, but of course, this is not necessarily something super exciting.

As a second starter, we went for the “deer bratwurst served on tasty creamy cabbage” (CHF 15.50), which was intense in flavour and perfect in terms of size to not overfeed yourself before the main course.

But obviously, it wasn’t time yet for the main course as we had pre-booked the “marmot stew with rosemary polenta” (CHF 21.00), as they often run out of it quite quickly. Hence, I was super curious to try marmot for the first time. The flavour profile is interesting, as it is rather intense, but without having any grade of overpowering or being too gamey.

As a main, I went for the “capricorn stew ‘chinzig’ (garnished with home-made pretzel, red cabbage, Brussels sprout, glazed chest nuts, pear, and cranberries” (CHF 40.00), which was quite interesting in terms of taste. The capricorn is definitely more intense in flavour than other meats I’ve tried in my life, but it was also enjoyable from a flavour perspective.

Last but not least, you get a little dessert which includes gingerbread, which was absolutely lovely. It didn’t par with the home-made gingerbread prepared by the mum of a former classmate, but it was definitely quite tasty.

The place is located in the middle of nowhere and about a one-hour drive from Zurich, but it is worth the drive if you want to try a bit unusual game meat.

What you have to make sure, though, is that you book your table well in advance, as they do not offer that kind of game all year long and the slots are often booked out quite rapidly. If you want a specific type of meat, I would highly recommend you to also ‘pre-order’, respectively ‘reserve’ that when booking (via phone).
