Dining at the Restaurant Mühle is a great experience – it started with something simple like “salted lemon butter” which was served to the bread. It was a fine start into the evening. The amuse bouche served was “trout mousse with grilled leek with fish eggs and codfish”. The grilled leek was fine, the trout mousse even mouth-watering.

The first course of the menu (CHF 93.00 per person) was a “Bavaroise of topinambur with rabbit filet and topinambur salad” – the rabbit filet was taste-intense, the bavaroise was tasty too and the topinambur salad made it a perfectly round dish.

The next course was “wasabi espumas” …

… with beetroot soup. The taste of the wasabi espumas was somehow overwhelmed by the taste of the beetroot soup but the soup was definitely very round and full of taste.

The “codfish on lentils with mango and pine nuts” was good. I mean, the fish was somehow tasty but not really special. The combination of the lentils with mango and pine nuts was extraordinarily tasty though.

The main course was “lamb entrecôte on celery mousseline, pepperoni, and rucola gnocchi” and the lamb entrecôte was super-delicious! The meat was extremely tender, it did not have the lamb taste lamb sometimes carries. It was just luscious! The rucola gnocchi were nice but there I have had better – still, it was good, no question.

Last but not least, it was desert time – “a cube of passion fruit and a chocolate cake”. The passion fruit cube was good and the chocolate cake was even better. The interior was slightly liquid but still had this fluffy consistency of a soufflé – breath takingly tasty.

For coffee, a selection of cookies was brought and I must admit that the different cookies were fine. All was accompanied by the respective wines – first, a “Completer, 2009, Th. Studach, Malans” was served which was good but a bit flat. Next was a “Chardonnay, 2008, D. Gantenbein, Fläsch” which was more intense and I, therefore, liked better.

For the main courses, two red wines were served, a “Pinot Noir Sélection, 2009, D. Marugg, Fläsch” and a “Pinot Noir Eichholz, 2009, I. Grünenfelder, Jenins”. While the first one was rather flat, the second one had a nice intensity a red wine should have (in my humble opinion). The place itself is nice, nothing special I find but it was nice. The service was good, dedicated, they did a good job but somehow they seemed a bit challenged with a group of 18.

If you are in the area of Fläsch, I can definitely recommend you the Restaurant Mühle. It is a nice place to dine, no question. If you have to pick one, I would recommend the Restaurant Adler in Fläsch.
